Wine of the Week…Rosso Puglia Appassimento

Appassimento Rosso Puglia Wine
This week our Wine of the Week is Rosso Puglia Appassimento, a firm favourite of our Off-Sales Manager Shane. A Full-Bodied Italian Wine, it is made from carefully selected Negroamaro, Malvasia Nero, Merlot and Cabernet Grapes.
The grapes are prepared following the Appassimento method. Appassimento is most famous for the unique style of some of Vento’s best loved wines, including Valpolicella Ripasso and Amarone. It is the process of drying grapes in ventilated drying lodges (fruttai) over the winter months.
Through the drying process the grapes lose around 30% of their water content, the sugars and flavour compounds in the grapes are concentrated. In addition, acidity decreases while resveratrol (the compounds linked to antioxidant properties in wine) and glycerine levels increase, lending balance, richness and a unique ‘glossy’ texture to the wines.
Here the Appassimento method is applied to the Negroamaro, Malvasia Nero, and Cabernet Grapes from the Puglia area of South East Italy. Producing a wine that is full-bodied, rich and complex. Lots of complex and fruity flavours with notes of dark, ripe cherries, fresh herbs and vanilla.
This wine is perfect with red meat, aged cheeses, and rich Italian Pasta dishes such as Spaghetti Bolognese, pairing well this week with a popular dish from our Bistro Range “Pan-Fried Steak Sandwich with Sautéed Onions & Mushrooms on Toasted Ciabatta” or with lots of dishes from our tasty ‘Tantalising Tapas’ range.
