Poached Salmon with Spinach & Lemon Cream Sauce

Ingredients you will need

  • 2 Salmon Fillets
  • Bag of Spinach
  • 1 Small Onion
  • 1 Small Lemon
  • 200ml Double Cream
  • 20g Butter
  • Fish Stock Cube
  • Salt & Pepper

Method

Finely chop the onion, sweat the onions in butter for 3-4 mins.  Add in cream gradually.  Cook for a further 2 mins.

Dissolve stock cube in a small amount of water and add to the mixture.  Add in the spinach.  Add in the salt & pepper & juice of half a lemon.  Cook for a further 5 mins.

Meanwhile poach the salmon directly in  a pot of boiling water for 5-6 mins or steam for 8-10 mins.

Pour cooked sauce over the salmon.  Slice remaining lemon to garnish.
