Beef Wellington with baby roast potatoes

Ingredients you will need

  • 800g Beef Fillet
  • 400g Puff Pastry
  • 100g Mushrooms
  • 100g Onions
  • 100g Breadcrumbs
  • 60g Butter
  • 10g Mixed Dried Herbs
  • 1 Egg
  • Black Pepper

Method

Seal beef fillet until outer layer is crispy brown.  Roll puff pastry until approx. 4mm think.

To make the onion & mushroom mix (Duxelle):

Chop the mushrooms & onions finely.  Melt the butter in a pan.  Sweat onions & mushrooms in the pan for 4-5 mins.  Bind all together with the breadcrumbs and herbs.  Spread the mix evenly out onto the rolled pastry.

Set beef onto the mix and roll it up in the pastry, making sure to tuck in the edges neatly until fully covered.  Egg wash the pastry and sprinkle with black pepper.

Bake for approximately 20 minutes until golden brown.  Rest for 10 minutes before serving.
